We’ve been growing our own herbs and veg at Cafedirect HQ and want to share some of the yummy lunches we’ve made using our own ingredients.
This lunch time we’ve made a great tasting, healthy tomato and basil bruschetta that is both inexpensive, and quick to make. We’ve used fresh basil that we grew from seed in this recipe and it tastes and smells great when you chop or tear it into the tomatoes.
We’ve gone for the really summery non-grilled version. It will comfortably feed 2 people as a starter or in our case a few people around the office.
You will need:
14 x Cherry Tomatoes approx or 6 larger tomatoes
6 x slices of Ciabatta
1 Bunch of Basil leaves (freshly picked)
1 x Garlic clove -raw (or half if feeling nervous!)
Olive Oil and Black Pepper to season
Chop your tomatoes, if using cherry tomatoes quarters will probably do. If you’re lucky enough to have some of your own home grown tomatoes these will taste great in this simple recipe. Toast your bread and drizzle with oil. Mix in the chopped basil (homegrown and freshly picked is of course extra tasty!) and stir the tomatoes and garlic with the olive oil (I’ve also used some red onion here). Mix it all up and pour on top of the bread. Delicious!
